Every time I make this egg sandwich I get requests for the receipe - so here it is, the divinely simple egg sandwich (aka what I make when I don't want to wash more than 1 pan).
1 THIN slice of cheese (I love butterkase)
Handful of fresh chopped spinach
Put the egg into the pan as if you were going to fry it. Then bust the yolk so it runs through the white. Cook for about 2 minutes then flip.
Put spinach top of the egg and cover with a top so the spinach wilts down a bit.
Cover with slice of cheese
Toast your bread then put your egg/spinach/cheese stack on top of the bread then top with sliced avocado and tomato.
